turkey roll ups

simply make turkey roll ups with:

whole wheat soft tortilla
turkey
cheese
lettuce
tomato
ranch dressing
any other toppings that you like

lay tortilla down and layer with all ingredients! pair with some sun chips and a bowl of soup for a quick dinner or lunch!

my son hunter loves these! esp because he can choose what he wants in it! he usually put the above things in and a handful of black olives!

crockpot white chicken chili

simply make white chicken chili with:
grilled chicken
great northern beans
salsa
sour cream (regular or light)
shredded cheese
tortilla chips

cook 2-3 chicken breast and slice, throw the chicken, 1 jar of salsa (16 oz), and 2 cups of great north beans into the crock pot, cook on low for 2-3 hours just to heat things up, then 30 min before you serve stir in a handful of shredded cheese and 3/4 cup of sour cream, serve with some crushed tortilla chips on top,and maybe some extra sour cream and cheese!

make a double batch to fill up the crock pot! its so yummy,you'll want to! also, i used left over chicken breast i had in the fridge, so this would be great to make out of last nights chicken dinner left overs! or get a rotisserie chicken and shred that to put in!

taco dip

having a few friends over this weekend and need an easy snackaroonie? well, here it is......

simply make taco dip with:

1 container sour cream
1-2 packets taco seasoning
lettuce
cheese
tomato
black olives

first mix sour cream and taco seasoning together....if you have a large container of sour cream use both packs if its a smaller one use 1 - 1 1/2 packs.....spread mixture on a platter, chop lettuce (or buy pre shredded lettuce) and sprinkle on top, next sprinkle the cheese on, chop black olives and throw them on top, dice tomatoes and put those on last! serve with tortilla chips!

tip: if you premake this before your guest come over, keep the tomatoes off until right before you serve it....if you put them on too early it can make the dip watery! also- another idea is to put beans on the very bottom layer...im not a fan of them but a lot of people like it that way!

all my friends LOVE this dip and make me make it for every girls night! (and bc some of them don't like black olives,i usually only put them on half,do the same if you have picky eaters)

italian potatoes

simply make italian potatoes with :

potatoes
a packet of "good seasonings" italian dressing
half stick of butter or  4 tbsps of olive oil

preheat oven to 375,cube potatoes,mix all ingredients together and bake for 30-40 min or until tender

if i don't have any good seasonings italian on hand i will just use salt,pepper, garlic salt and some other spices i like from the spice rack !

this is a great side dish instead of the traditional baked potato!

breakfast for dinner

simply make breakfast for dinner with:

some breakfast ideas:
pancakes
bacon
eggs
fruit

my personal fave:
hashbrown casserole
 2 pound package of frozen hash browns
1/2 cup melted butter
1 small can of cream of chicken
2 cups shredded cheese
1- 8 ounce container of sour cream
salt and pepper
1/2 cup onion
(which i sometimes make mine without if i don't have any)
(optional: crushed crackers or cornflakes for crunchy topping)

preheat oven to 350,mix all ingredients together, put in casserole dish,(put cracker topping on  last),cover and and bake for 40 min!

this hash brown casserole is AMAZING!!!

make this for dinner or even a saturday morning breakfast! i will usually make this up the night before to pop in the oven in the morning!

p.s one little tip...if you use boxed pancake mix like i do, i add some flavored creamer to the mixture for a little extra sweetness in place of part of the milk or water!

taco tuesdays

simply make tacos with:
hard shells
soft shells
ground beef,turkey,steak or chicken
lettuce
cheese
tomatoes

well, i was going to make a roast for tomorrow nights dinner but just discovered that i fulled a huge pack of hamburger out of the freezer instead...so tuesday night is going to be taco tuesday! i think tacos are pretty easy to figure out how to make them!;)

i will usually just buy a taco kit with both hard and soft shells in it and most of them come with a packet of taco seasoning too! also, to save time i buy the lettuce in the bag that's already shredded. i will put out chips and salsa too and make some spanish rice (the liption sides spanish rice is so yummy and easy!)

this would be a great family dinner because kids will love to build their own taco!

pot roast

simply make pot roast with:

1 beef pot roast
2 packets of lipton beefy onion soup mix
baby carrots
potatoes

place roast in crock pot, jab the roast with a fork to make tiny little holes to allow the flavor to get in more, pour just enough water in to cover the bottom part of the  roast, add in 1 1/2 packets of the beefy onion soup mix and kinda stir around and rub on top of roast, cut up potatoes and throw them in, layer in the baby carrots and sprinkle remaining beefy onion soup mix over top,salt and pepper (and maybe a little garlic salt too) and cook on low for 6-8 hours

everything will shrink down a lot so don't be afraid to stuff it to the top! sometimes my mom would make mashed potatoes with this roast but i have to admit i've never made them and throwing potatoes in the crock pot is just way easier!

flat bread pizza

simply make flat bread pizza with:

 personal size flat bread (usually a 5 pack)
pizza sauce
shredded cheese
your choice of toppings

preheat oven to 350, bake for 10-12 minutes...a little longer if you want extra crispy crust

i went to my friend damara's house for a play date and she had this for lunch!
it was so good and nice that i could add whatever toppings on my own pizza and on hunter's too! this is great for play date's or a super easy dinner if you have a house full of picky eaters and you can never decide on what to order on a pizza from somewhere! this also makes dinner fun if you have your kids make their own!

i usually buy whole wheat flat bread to make it a bit healthier!

mexican dip

simply make mexican dip with :

2 blocks of cream cheese
1 1/4 cup cup taco sauce
1 1/2 cup cheddar cheese
1 can of chili no beans (optional)

first, soften cream cheese and spread along bottom of the pan,then pour taco sauce (and chili,if you chose to use it) over top, sprinkle cheese,cover and bake at 350 for 25 minutes or until melted

if you want this a little spicy you could use the "hot" taco sauce but i usually just use mild. also, i'm not a fan of canned chili,so i don't use it in mine,but that's what the original recipe called for. you can add more or less cheese depending on how much you like

chicken tetrizini

simply make chicken tetrizini with:

1 pound of pasta of your choice
1 small can of cream of chicken
1 small can of canned chicken or two cooked chicken breasts
1/4 cup milk
french fried onions (optional)
broccoli (optional)

boil your pasta,drain and stir in cream of chicken,cubed chicken,milk and broccoli. put in casserole dish and sprinkle french fried onions on top. bake at 350 for 30 minutes

also,i use the frozen steam bag of broccoli to make this easier.you can sub in whole wheat pasta and add extra veggies to make this healthier.

this is really simple and my kids love this!

garden veggie soup

SIMPLY MAKE GARDEN VEGGIE SOUP WITH :

2/3 cup diced carrot
1/2 cup diced onion
2 garlic cloves minced
1 1/2 cups green cabbage
1/2 cup green beans
1/2 cup diced zucchini
1 tbsp tomato paste
1/2 tsp dried basil
1/2 tsp oregano
1/4 tsp salt
3 cups of broth (veggie,chicken or beef)

saute garlic, carrots and onion on low heat until tender (approx 5 min) then add the rest of the ingredients....bring to boil then reduce heat and simmer for at least 15 minutes!

this soup is so good! i didn't know that i like cabbage till i tried this!if you dont like certain veggies, sub something else in.

also, if you don't have a bunch of spices in your house, experiment with others! that's what i do every time i make this soup. i always make a double batch bc this recipe only makes 4 one cup servings and its so good,you'll want more!

corn chowder

another crock pot recipe :)

simply make corn chowder with :
1 cup of milk
1 small can of cream of chicken or mushroom
2-3 potatoes
1 can of cream corn
1 little ham steak or piece of ham
(optional - 1 can regular corn)

first cube the potatoes and boil them. while they are cooking,cube up your ham steak into little bite size pieces. drain potatoes and throw them in the crock pot with all the other ingredients! its that simple! cook for atleast an hour before serving

i will usually make a double recipe and either freeze the leftovers for another nights dinner,or pack it for my hubby's lunch the next day

BBQ beef ribs

this is one of the easiest dinners!!

its so cold outside (well,in ohio anyway) and what could be better then a plate full of hot yummy bbq ribs?!?!?

simply make your dinner with the following:
your crock pot
bbq sauce
beef ribs

i really like jack Daniel's original recipe bbq sauce! also, i buy the boneless beef ribs but you can also buy pork!

pour 1/2cup bbq sauce in the bottom of the crock pot,layer in the ribs, pour more bbq sauce on top (to your liking)
set on low for 6-8 hours

i usually serve with baked potatoes and throw a steam bag of corn in the micro and your good to go! these ribs will fall apart!! so simple!!!
